In a nutshell, we extract the flesh of our older coconuts, then mix the shredded meat with water. Then ferment the defatted coconut milk for nearly 2 months to create our vinegar.
NOTE: You may notice a “mother” at the bottom of your bottle of coconut vinegar. Don’t be alarmed! The cloudy substance made of strands of proteins, enzymes and gut-friendly bacteria.
